The following are recipes that have passed through our kitchen. They're not always winners, but we'll tell you if they're not, and what should be changed to make them better. Enjoy!

Stuffed Zucchini

First a shout-out to Nicole who gave me this kickass shirt and also encouraged me to get back to the blog!

So tonight I made stuff zucchini. I didn’t really have a recipe, but I got zucchini and spinach at the farmer’s market so I figured I’d come up with something… I also had leftover sandwich roll and some shredded cheese from making lasagna.

First you hollow out the zucchini.

You may want to chop or breakup the inner zucchini pieces. Then chop up your spinach. Mushrooms or any other veggies would probably be good too.

Throw in some garlic and herbs. We chose pineapple sage from our herb garden.

Isn’t it pretty? We got this plant at the farmer’s market too and it is thriving!

Mix it all up and add some olive oil (this picture also has the bread crumbs and cheese in it).

I don’t have any real measurements for you, but I’d say equal parts zucchini middle pieces and spinach with a hand-full of bread crumbs and a cheese. Use enough oil to make it all moist and sticky. I also added salt and pepper. Then stuff.

I cooked mine at 350 for 25 minutes and they looked like this:

Yummy. And great if you have a vegetable garden that’s producing a bunch of zucchini.
